On our continued quest to understand and appreciate all manner of mixed culture fermentation, we present In Spirit. Fermented open in stainless with both a classic Belgian Ale strain and Brett Brux at elevated temps for maximum ester development. After the bulk of primary fermentation was complete, the beer was then conditioned on an abundance of in house processed orange zest. ? ? After an extensive and customary period of bottle conditioning to slightly higher than standard levels, we taste bright candied orange with a crisp, sweet tart like tropical acidity. Much like many of our mixed culture beers, the dryness and full attenuation lend themselves to 750ml of simplistic enjoyment
