This apple champagne is another cracker from Thorogoods. There's no pretence at mimicking the colour of champagne - this is classic cider gold.But it resembles champagne in every other way, from the skinny collar of bubbles to the tiny foam atolls adrift in the centre of the flute and the columns steaming from the base of the glass. The aroma is light but complex. It's dry and fairly austere with an unusual strawberries and cream note, Granny Smith acidity and some oak. The mouthfeel is quite hard, with plenty of spritz. Lots of upfront peachy fruityness then a wash of puckering apple tartness in the finnish. Not too sweet and not too dry.
