We brewed this beer as complex yet as simple as Madame Butterfly herself. This is a Blonde Grain Bill that has been waiting for the brewer's return. This beer was aged with Brett and Wild Yeast from S.C. for over a year in French oak barrels. This delicate balance between light and tart make this beer a true demonstration of craftsmanship and patience.

Pours clear, bubbly topaz with a thick though not long-lasting ivory head. Aroma presents tart pomme and fresh malt with a tropical hint. Flavor gives up tart and sour pomme and tropical fruit, fresh malt, a little woody hops and a floral hint. Texture offers OK body and fair fizz. Nothing tragic about it.
