This beer has a rich heritage and in 1986 the Kolsch Convention prohibited the production of this beer outside of Cologne Germany. There were a few breweries, established prior to the convention, that were grandfathered in and are still allowed to legally call their beers Kolsch. Although there are many commercial examples of Kolsch in the US, and other parts of the world, we have no local laws preventing us from calling our beers Kolsch (Way to go America!). Keeping this in mind we strive to make this beer as close to the German style as possible, using as many of the same ingredients and brewing processes as possible Native to Cologne, this German ale’s notable clarity is complemented by a bright golden hue. The encompassing triumph of this beer comes from its delicate depth of flavor. It’s clean, crisp taste and low hop bitterness/aroma make it a most refreshing thirst quencher. This fun, light beer pairs well with lighter foods like salads, salmon, or chicken, as well as nutty cheeses like Monterey Jack, and desserts like lemon custard tart.
