A taste of history – matured in the bottle for two years, or more, before disgorging. There is evidence of cider being made in the Royal Forest of Dean by this process back in the 17th Century. Coal was used to heat furnace's to higher temperatures, which enabled glass to be made harder and stronger. A bubble shaped bottle was developed which could be corked - thus keeping air out, and allowing the ciders to mature to their true character. Carbon dioxide made during the bottle fermentation create a natural sparkle.
