A rich auburn ale, brewed with five European malts, Caribbean demerara and a special blend of herbs and spices. Cellared in oak for six months, naturally carbonated, and packaged unfiltered for a complex flavour profile and stability over time. Clarity is achieved through a careful brewing process and extensive aging. Enjoy it today, or lay it down and savour the changes in character as it continues to mature. 2012 Version: 8.5% ABV

The beer pours a semi-translucent copper colour with a thin tan head. The aroma is spices, fruits, malt, and yeast. The mouthfeel is medium bodied with medium carbonation. The flavour is fruit, yeast, and spices with a very Christmasy feel. I loved this beer. -

Pours a dark brown/red with very little head. Leaves no lacing. Aroma is spicy and fruity. Taste starts sweet. Then comes the spicy sour flavours and dark fruits. Medium mouthfeel with very little carbonation. I am not that familiar or a big fan of this style beer but this is quite tasty

Bottle: Pours a burnished amber color, clear, bright, abundant white cap. Sweet caramel-toffee malts in the nose spicy herbal hops...very rich aroma Ample chewy body, sweet malt dominates the front side as fruity yeast esters and hop spicyness join later, long rich finish with some char/toast from black malts, malty-sweet finish with a lingering sweet-bitter aftertaste. Not a bad offering at all, these rich ales aren’t my cup of tea but I like this one well enough......................... UPDATE!!!!!!!!!!!!!!: Cuvee 2008: Bottle: Pours a burnished copper coler with red highlights...fair cap for the style. Aromas of fruits and spice over sweetness. Profile: In the front, the ample maltyness gets wiped out by fruit-spice tastes and nippy juniper-like herbal notes...crashing flavor profile...center gets more complex...finish is clean and puckering. Very good effort. I’m not well acquainted with the cuvee styles but this was a very flavorful satisfying ale with a devastating flavor profile.
