Brewmaster John Pinkerton says, "Everyone’s pretty excited about Moon River’s first full scale fermentation using the wild bugs that make so many Belgian beers taste so complex and intriguing. First, we fermented a basic pale ale recipe using our house-Belgian Saccharomyces yeast strain, yielding a relatively malty, sweet pale ale with only minimal hop character. Then we pitched a culture of Brettanomyces yeast to kick off a true secondary fermentation of the residual malt sugars. At our last tasting some zippy cherry-like notes had developed as well as a musty hint of that indefinable, yet instantly recognizable classic Belgian character. Next, in the tradition of Brewery Orval, we’ll have dry-hopped this brew with a healthy portion of Styrian Goldings. Look for the Goin’ Monk to continue to evolve over the life of this batch.
