Paired with Tomme Noire des Pyrénées cheese at Brewers Summit in Knoxville. Nice deep amber reddish pour with a tall, creamy off-white head, lots of lacing. HUGE malt bomb - sweet caramel malt aroma, toffee, ripe fruits, some earthy hops but mostly grains. Taste is malt-bomb too, with a very pleasant, non-sticky mouthfeel, almost like a dessert beer, ripe dark fruits, a hint of cocoa, lots of caramel and toffee, then a touch of hops - just enough to cut any cloying. Impressive big ass beer from this nano brewery from Chattanooga. Great pairing.
