La Gouez est issue d'une longue fermentation associant des levures traditionnelles et tout un ensemble de micro-organismes sauvages. Élevée en fût de chêne, elle développe lentement une palette aromatique surprenante et une acidité qui caractérise ce type de bière. L'assemblage par la méthode Solera permet d'obtenir un mélange de différents brassins vieillis jusqu'à 3 ans en barriques
