A gentle introduction to sour beers, our Eldersauer is a crisp summer beer. We took a basic pale ale - single malt and single hop (Eureka) - and then infused the finished fermented beer with freshly picked local Elderflower for two weeks. At this point, Mother Nature involved herself and the wild yeast from the flowers worked its charm. There is a crisp, tart beginning, and finish reminiscent of cider apples and also gooseberries, but cloaked overall by that elusive Elder taste. The light ABV makes this a refreshing and more-ish sup, especially when the heat is on. Serve chilled for maximum fun or, even better, have something sweet to eat so you have the perfect contrast to Eldersauer.
