A blend of one, two, and three year old spontaneously fermented beers. Each season we allow wort to chill overnight outside in our farms retired milk chiller which in turn inoculates the beer with wild yeast and bacteria. Once transferred into oak barrels these beers are allowed to ferment and age for several years before blending and bottle conditioning with local honey.
