This cider starts from a country cider, just fermented apple juice with no additions. This initial sweet cider is pressed from a typical “Great Lakes” blend of apples including: Red Delicious, Cortland, Golden Russet, Greenings, Jonathan, and Ida Red. All of these are September sweet/sharp apples. The cider is then fermented during the winter months with Cote de Blanc yeast. Temperature is not specifically controlled but ranges from 50-55 degrees F. Stablized by sterile filtration, sulfite and sorbate. It is then force carbonated.
