'1913' - a stock ale. After many painstaking hours delving into the history of the UK and North American hop growing regions, malt characteristics, yeast availability, fermentation and brewing techniques of the early 1900's, this is my interpretation of an early 20th century stock ale as it would have been brewed in Eastern Canada. The Beer In The Making: The sought after preservative qualities of North American grown Cluster hops of the day were used in combination with Kent Golding hops for their excellent aromatic qualities. Fermentation characteristics are somewhat subdued from the cool yeast pitch and fermentation temperatures. Likewise, malt complexities are kept fairly clean and simple here with Pale malt used as the base with a healthy addition of Crystal malt approaching 7% of the total grist bill contributing a rich copper hue and strong caramel notes. A warmer mash temperature lends a medium to full-bodied mouthfeel, great balance and moderate alcohol content.
