Year One anniversary blend is a special release to celebrate Halcyon Barrel House’s first year as a brewery. It is the blended and augmented yield of a handful of our most well-aged, and most interesting barrels from this past year. Think of it as our year-in-review highlight reel. To create Year One we sampled barrels across all styles we have in house, and made a short list of favourites. A touch of fruit comes from aging on peaches reclaimed from Shifting Sands: Peach, the blend includes Gravity Well as a whiskey-barrel edition, and organic vanilla beans were added post-blending. The Year One blend pours effervescent and amber-orange, with foam that dissipates quickly. The aroma is ephemeral, dancing lightly between vanilla, wine and fruits such as apricot. The flavour is tartly sour, with the fruit+vanilla of an orange Creamsicle. It finishes dry, with some lingering funk.

    Pours a clean caramel-amber with a light warm-beige fizzy head that dissipates quickly and hardly any lacing. Just some tiny foam on top, from the tiny bubble carbonation. At first, balsamic vinegar nose that is blended with hints of peach. Then, the vanilla comes out to complete the balance, which lightens the vinegar aromas from normal wild yeast. The mouthfeel is sour, very slight tarty with a mild dry finish. Feels a little thin in the lingering part. A sour start to the flavours with with balsamic touch and then calms down slowly with some notes of wood, vanilla and peaches. Very nice and wishing Halcyon long life.
