Waking Dreams wanders the overlapping realm that lies between two alternate states of being: in this case, barrel-aged beer and berry wine. For Halcyon Barrel House, Waking Dreams is an exploration into the unknown. Last fall we selected four barrels from our stock of young, lightly tart gold beer. which had been aged for three months. To each barrel we added a significant quantity of locally grown organic haskap, a small, dark blue berry. The barrels underwent a secondary fermentation and aging period over the winter, then were blended together for packaging and release this spring. Waking Dreams pours a deep cranberry colour, with light berry-pink foam that dissipates quickly. The aroma is of berries and wine, with a touch of fruit skins. The flavour is tart, with lots of juicy, berry wine character. Plenty of tannins round out the body. The beer finishes dry, with a pleasant, lingering taste of fruit skins.

    Pours a slight hazy ruby-reddish colour with a fizzy pinkish head, decent stay compared to their other barrel aged sour gold beers. Some bubbles stick a-round the rim, and here and there on top. Did not know about these haskap berries, but berries is what takes control in the nose over the sour base. The taste shows the sourness with the berries being more in the background this time. Woody notes, tart and tannins sticks to the tongue. Just a little bit. Wish the berries were just a tad stronger in the taste.
