Bière de fermentation mixte à la mûre et fleur d'hibiscus. Fermentée et affinée en foudre de chêne avec un cocktail de levures sauvages et de bactéries pendant 8 mois. Au bout de 5 mois de fermentation, nous avons ajouté une grande quantité de mûres entières, puis juste avant l'embouteillage, nous avons fait une infusion de fleurs d'hibiscus. Complexe, boisée et acidulée où le fruit et la fleur apportent de beaux arômes et se complémentent parfaitement.

Bottle from my first trip at the brewery. Hazed, amber colour with golden highlights, a fizzy head that disappears quickly, but carbonation is lively, continuing a fizzy top in the middle. Particles from the fruit-flower floating around. Mild vinegary aromas with the blending of blackberries and hibiscus. The fruitiness comes out on top in the flavour, with the wildness in the background. A nice blackberry-hibiscus beer with a tamer wild-funkiness - which I appreciate.
