It’s that time of year. Witch Meadow 2022 was aged in a combination of Buffalo Trace and Willet Bourbon barrels for a blended average of 20-months. Our approach to high-gravity, barrel-aged beers has always been to seek depth and complexity through subtle variation and layering - carefully tinkering with grist composition, fermentation profile, barrel selection, etc to give us a broader palette to pull from when blending. As we grow and mature, barrel residency time has proven to be the latest tool added in this regarded. Intensely concentrated and characterful older stock coupled with younger (year-old barrels) lends layers of flavor that we find separate this Witch Meadow from previous iterations
