A three-way collaboration with head brewer Ben Howe of and at Ebeltoft Gaardbryggeri and Jesper Hald, a very talented home brewer who has a spruce plantation where he has picked the very tiny and young tips used for the brewing of this unique beer. Inoculated with an Ebeltoft Brett culture in secondary instead of the cider drays used in version 1.0. The beer is very dry, crisp and hugely aromatic with noticeable citrusy spruce character and brett complexity in a pale, light, highly drinkable and refreshing beer.

Shared bottle at local tasting. ABV is 6.0%. Golden colour, white head. Nice aroma of citrus, spruce tips and spices. Good flavour, medium dry, with a nice bitterness. Notes of spruce tips.
