Over 2 years in the making, Les Coeurs is our first barrel-aged sour beer to be released. It started as a simple American Blonde Ale, which was then transferred to a to oak barrels (a mixture of Chardonnay and neutral oak) with a blend of bacteria and wild yeast. These critters spent about 18 months working hard to produce the lactic acid so prominent in the beer.
