One of the few and rare products we are working on is Nocino; an Italian Walnut Liqueur that has a short window to produce every year (and once a year). Green walnuts are harvested from our relative’s farm in central California to create this liqueur. After utilizing these premium nuts for our distillery, we brought them over to the brewery and saturated our barrel-aged base on them for a few weeks, along with clove. This results in a heavily spiced, nutty, and spicy product that we then back sweetened with a trio-original of vanilla beans, brown sugar and cacao nibs.
