Auster la Vista is a Gose, using whole oysters and their delicious brine from Pambula Oyster Co., pink grapefruit peel, lemon peel, and lime peel, and coriander, plus Murray River sea salt. Tart and dry, with great citrus notes complemented by a delicious saltiness from the oysters. Food pairing - a dozen freshly shucked oysters.
