He is a ruler, an overlord, a top dog, a crowned head. In the richly varied domain of prokaryotic microorganisms, Jelly King reigns supreme. Rather than choosing between sour or hoppy, we decided to create a beer that would be both at the same time. Showcasing the aromatic benefits of a generous dry hop (Citra, Amarillo, and Cascade), harnessing the pleasing acidity of lactic acid producing bacteria (we use a 5-strain house blend), and coming to a bottle near you without a pesky 2 year slumber in oak, Jelly King is the fermented embodiment of having your cake and eating it too. This limited edition Jelly King variant was conditioned on loads of raspberry and blackberry purée.

The beer pours a solid dark pink colour with a thin bubbly head which recedes quickly to a fine film on the surface. Lacing is erratic, but present. The aroma is tart fruit, vinegar, yeast, and grainy malts. Mouthfeel is medium bodied and amply carbonated. Flavour mimics the aroma with grains and tart fruit. Another solid Bellwoods beer -

500ml bottle from LCBO. Pours an average size foamy pink head, weak lacing, has a dark ruby coloured appearance. Lively carbonation. Aromas of raspberries at first blending with the blackberries, some grassy notes and a bit yeasty. Flavours are mostly fruity with the berries (raspberries more so than black). A little bit of wheats and grassy herbal hops. Fairly strong sourness on the palate.

Pours a hazy berry-red colour with a pinkish frothy head, good retention and foamy lacing. Sour nose with some decent grainy notes and of course, the blackberries and raspberries. These fruits are also found in the taste with the sourness and some hints of vanilla. It is very jam-like and goes down nicely like other Jelly King beers.
