Inspired by the Belgian lambic breweries, this traditional turbid mashed beer was brewed with 60% local malted barley and 40% local raw wheat. Boiled for 3 hours with aged whole leaf hops and cooled overnight in our coolship, this beer was then racked into clean/neutral oak casks and allowed to spontaneously ferment and mature for two years. Packaged still in a bag in a box, without carbonation, to truly showcase our local terrier and flavors. Mild acidity paired with soft minerality, malt complexity, and aged hop aromatics

Pours slightly hazy amber with minimum head. Aroma provides tart stone and citrus fruit with some funk. Flavor delivers very tart and funky stonefruit and citrus. Texture features OK fizz & body. Beer in a box? That's the most unheard of thing I've ever heard of.
