Hibernator 2022 Bourbon Barrel Aged Imperial Stout was aged for two years, developing a rich and sour stout, with notes of caramel throughout. Funky and acidic, yet earthy, this soured stout has a complex character that is a fun sipper for the holiday season.

Fairly clean copper-brown colour with an amber hue. A beige, bubbly head, fizzy, quickly leaving and a small ring remains on top of the brew, but no lacing. Some interesting cacao aromas for the style, with some booziness, caramel malts, hints of Cabernet Sauvignon. Even some dark fruits, feeling like fruit cake. Some bitterness in the taste with anise notes. Looks like chocolate malts, over the caramel one. Not overly rich, so goes down nicely enough. Not your typical Barley Wine, with lots going on, and an interesting chocolate side. Much better than their 2022 Sour Impy Stout bottle.
