Afin de souligner le 5e anniversaire du Bièrologue et le 10e d’À La Fût, un brassin festif était de mise! David étant un amoureux des bières d’automne, la pomme teinta notre inspiration. Un levain de fermentation naturelle provenant de la Cidrerie Milton fut la prémisse à cette fermentation sauvage. Des pommettes Dolgo pressées furent ajoutées à un assemblage de dix fûts de chêne différents avant de maturer sur une période de 12 mois. Collaboration.

    Can from the brewery on my Quebec Beer Run 2017. Pours a hazy golden colour with a fizzy-frothy warm cap, lasting long enough and leaving some decent foamy lacing. Wild funk aromas with some earthiness, well-blended with the yeast and hints of vanilla from the oak barrel. The taste is much milder, but has the real apple taste with the light earth notes, sourness and lingering tart. The oak is hardly felt. I think this is well-done with all the things, but wish it had just a tad more punch (probably at 5.5% ABV).
