Afin d'apporter une signature particulière à notre Triple, nous avons choisi d'utiliser les levures de deux brasseries trappistes (Chimay et Westmalle) afin de créer notre interprétation du style. Au nez, les esters de levure (fruités et épicés) dominent complètement, avec une légère douceur de malt. Le corps de la bière est plutôt rond et hautement gazéifié. Au goût, les agrumes apportés par les esters de levure s'expriment particulièrement, puis on remarque de la gomme balloune et finalement un petit peu de clous de girofle. L'amertume finale est légère et se balance agréablement avec l'impression de sucre résidus.

    Mostly clean with big carbonation at first, turning into tinier bubbles. An off-white bubbly head, average stay and a light touch of foam on the top-ring. Mild Belgian yeast, sugars with some nice spices, bitterness and alcohol. The taste is fairly mild with a little fruitiness, hints of sweetness. The boozy-bitter touch is there, and some dryness shows up. Gets a tad hazy, but not much. A Tripel that calms down the nose to something very easy to sip. Not much else.
