Meads are fermented products made primarily from honey, water, and yeast. Although they are not techincally "beers" (they lack malt and only Braggot meads tend to have a hopping option) they are one of the earliest forms of fermenation known to man and a significant historical predecessor to the art and science of brewing beer. The flavors range from sweet to dry and the strengths from extremely strong (~20% ABV) to low (~3.5% ABV). Secondary ingredients and chemicals such as citrus fruits, tea, oak, and tannin may be used to adjust the final product qualities. Aging is also a key factor in obtaining the desired end product.
