We primarily ferment our Wild Wild Heaven sour & wild ales with brettanomyces in steel before adding fruit and a blend of lactobacillus cultures. We then blend in barrel-aged beer from our stocks for additional depth and complexity.

Pours clear cherrywood with a fairly thick but ephemeral head that has a pink tinge. Aroma features fresh raspberry, tart and sweet, with a raw malt underpinning. Flavor yields tart raspberry, raw malt, and more raspberry. Serious raspberry. I LOVE raspberry. Texture provides fair body and so-so fizz, but a nice raspberry finish. Did I mention that I love raspberry? Don't razz it, drink it.
