Serenity is our aptly named 100% Brettanomyces fermented beer. We are one of only a handful of breweries in the US doing 100% Bretta fermentation. That said for our first one we wanted to do it in the farmhouse style that bretta entered the Belgian brewing world. Serenity is light in color with a subtle golden haze, the nose bursts of white grape, mango, pineapple and old leather. The flavors are similar to those found in New Zealand white wines and notes of guava and grape skin stand out leading to a well-rounded finish.

If you get this in a bottle, be sure to have a thirsty towel handy, as my sample fizzed quite a bit. When it settles down, it pours translucent apricot with a rather thick eggshell head. Aroma presents delectable sour grape, pineapple, mango and fresh malt tones. Fruit is the main player in the flavor, again with pineapple (I love pineapple!), mango and grape, fairly sour with a malty undertone and a dry wine finish. Mouthfeel features decent body and OK fizz. A serene wild ale - if that is not an oxymoron.

Cloudy yellow with white head. Aroma is funky with some barnyard, vinegar and lemons. The flavor is slightly sour with some lemons and vinegar. A little bit of aged cheese going on there. Finish is a bit dry and dusty. Overall a nice wild beer.
