Dark Arts is a Wild Imperial Stout and North Carolina's first beer to reach the 15% ABV legal cap. Aged since 2013 in Bourbon Barrels, this ale is the fulfillment of a goal we set for ourselves in the beginning: It wasn't enough to merely strive for the cap, we had to craft a culmination beer, reflective of our love of all beer styles. Here we humbly offer you a little piece of history, and a large part of our heart for this craft we call beer. A bourbon barrel aged imperial stout of such a high alcohol content can be cloyingly sweet. Head of brewing operations, Walt Dickinson, uses Brettanomyces yeast to cut down on the sweetness and dry out the beer. Dark Arts was brewed in October of 2013, and racked to bourbon barrels for nearly a year. Above, Walt pulls the nail on one of the Dark Arts barrels for Beer Street Journal back in August. (Lots going on in this beer.) When you think about really good spirits, they are innately dry (not sweet) and without residual sugar,” adds Walt, Head of Brewing Operations. “Barrel aged stouts can be cloyingly sweet, but because we use brett, Dark Arts is a dry beer. Any residual sugar not usually consumed by traditional brewers yeast will be consumed by the brett and you won’t have to fight through too much sweetness.”
