We bring back our AKA fermented this time with a blend of brettanomyces. It’s rich and malty with a fun wild side. Barrel aging is a process we love at White Birch. There is no hurrying a barrel. For this, we think the effort is well worth the wait.

first wild of the day .. . medium amber .. light foam .. . light tartness, some barrel, and wet wood .. . light mouth .. quite a clean finish, short .. . . nice stuff, age has been good .. . . I wouldnt call myself crazy, Just mentally hilarious.

a little apprehensive going on based on consistency issues being relayed to us 2nd hand by the guy who brought this brew. but there have been hits as well as misses, and this one was pretty good. nothing mind blowing, but it had a nice fruity (cherry) cider vinegar aroma, tart and slightly sour, but fairly mellow flavor. A good intro to the style, perhaps.
