Grand Houblon Sauvage – Ever had an extremely hoppy sour beer before (sour, as in Lacto… Bretta does not create sour flavors)… The answer is NO! You have never had a super hopped sour beer, because the microbes that male the cheek puckering sour are extremely sensitive to hops! We’ve figured out a method to get around these sensitivities and developed a 100 IBU brew fermented with Lacto and Bretta, aged in barrels, and then dry hopped.

    Pours a hazy dark apricot with a fairly thick and fine-bubbled eggshell head. Fruity aroma is quite sour and has a yeasty hint. Flavor is quite sour, with a snip of hoppy bitterness - not make-your-face-do-aerobics sour, but pucker-worthy just the same. Texture is firm, smooth, and rather fizzy, leaving a nice sour apple finish. Swing on over and grab one!

    Sampled on 10/10/2012 at the Trinity Brewpub. This IPA/Wild Ale pours a very hazy medium copper gold color from the tap. Medium to full sized white foamy head. The aroma is is fruity, sweet, tart and hoppy. A medium to full bodied IPA/Wild Ale. The malts are fruity and sweet, tart and funky. The hops are citrusy and grapefruity. Nice carbonation. Its an interesting mix of sour and hoppy. They kind of compete and the sort of blend together. Very odd, very nice, but very odd. Overall its VERY grapefruity. Very different beer. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is bitter and tart.
