We got super fancy with our procedures in the brew house on this Saison. Brewed with the rare ‘chit’ malt, spelt, rye, raw wheat and barley; a noticeably high in protein mouth feel is apparent. Employing a double fermentation, we first used lactobacillus bacteria in a hot fermentation to dramatically lower the pH and create a refreshing sour note. After the hot fermentation, we boil the wort and move it into a fermenting vessel for the second ‘cool’ fermentation using Saison yeasts and wild Bretta. After fermentation we age the batches on pineapple to create a extraordinary and ground breaking beers. Please enjoy the playful levity of fruit as it dances elegantly with a refreshing acidity across your palate.

Sampled on 10/10/2012 at the Trinity Brewpub. This wild/sour ale pours a very hazy light orange gold color from the tap. Small to medium sized white foamy head. The aroma is fruity and sweet, pineapple and tart. A medium to full bodied wild ale. The malts are fruity and sweet, with some pineapple sweetness and tartness. The hops are earthy. Lively carbonation. Slightly tart and a touch funky. Nice balance between the fruity and tart. Very refreshing beer. Very different. Extremely drinkable. Mouthfeel is full and round. Finish is clean, smooth and dry. Aftertaste is slightly tart.
