The primary component of our “White Oak” ale is a 100% barrel aged wheat wine that we affectionately refer to as “White Oak Sap.” Essentially a “summer” barley-wine style ale, but made with a wheat heavy grain base, White Oak Sap is aged in used bourbon barrels for nearly a year and comes out rich in flavors of coconut, honey, caramel and vanilla. To compliment the already rich flavors of the beer, we’ve added cacao nibs and vanilla beans to give this beer the delicate flavor of white chocolate…hence the name.

Pours clear, dark honey golden with a thin pale buff head. Aroma delivers yeasty, malty and chocolate notes. Flavor continues the chocolate tone plus malty and fruity notes. Mouthfeel delivers average body and fizz. Brew up some white chocolate.

Friend shared this rare treat at a recent tasting. Wow. Lots going on in here. Requisite "white chocolate" aromas and flavors, vanilla, cake, booze, creamy mouthfeel, like sex in a bottle.

I don't even know where to start with this one, it had been a wish list brew for awhile that I finally had the chance to sample. Golden pour with a light white head but little retention. Beautiful aromas of bourbon, strong vanilla, ad chocolate. Quite simply, this tastes like white chocolate soaked in bourbon. It's massively complex yet quite simple, enigmatic really. I believe it's the best brew I've had from the bruery and one of the best beers I've sampled this year. Truly phenomenal.

Decadence in a bottle. Smells and tastes of white chocolate truffles, waffle batter, vanilla, coconut, bourbon...almost all on an equal playing field. Alcoholic, but not hot. An excellent sweet thick sipper, and in the (crowded) upper tier of Bruery beers.
