After making a extremely large imperial stout we were able to rinse the grain further to extract enough to come up with this odd creation. Throwing caution to the wind we tossed the beer in a barrel and let it ferment au natural. We came up with a particularly aggressive wild yeast that we like to call “Sam”. He is an extremely sour, mouth puckering little bastard and has made a lovely addition to our collection. This is what Sam does to a stout, by himself, with no one else to maintain him. Prepare yourself, and enjoy.

This is a funky/sour brown ale/stout made from the 2nd runnings of an imperial stout. Pretty nice sessionable lightly tart and lightly roasty brew. In our party of five, this was one persons' favorite. Mid pack for me.
