We reserved 4 red wine barrels from 14 other bourbon barrels when blending Recolte du Bois - Peach to make a special blend showcasing those four barrel’s unique and vinous qualities. The fruit was more subtle, and sulfur was more pronounced yielding more of a white wine impression than any other beer we’ve had before. We then dry hopped the blend with vintage 2009 Saphir hops which brought the fruit back out, increased perceived tannins and lemon tartness, and added a gentle floral bitterness.

Fantastic nose on this one (9.5) with the underlying peach juuust peaking out enough to let you know it's there. Mostly cheesy funk and some hoppiness, which shows up just a little in the flavor as well. Lots going on here - and very well done!
