Lindsay Cook is a Scottish gentleman/farmer, father of Sheena Cook Kopman (who is married to our V.P., Dan), and the beer we named for him is a slightly sweet, mildly-hopped, gently-carbonated amber Scottish ale.

A malty one, this is, as expected. It only hinted at the peat smokiness that I expected to come out swinging. This one did have that scorched/carmelized character expected, and hops stayed to bittering. Another good one...of course.
