Our barrel aged, blended sour ale bottle conditioned with local Fall flower honey. Batch 2 is an aged extension of Batch 1, containing a large portion of the same exact beer, but aged another year. This blend contains beer aged in white and red wine barrels, with a small, young un-oaked component blended in for balance. We once again selected our favorite Fall Flower honey from Waid's Honey in Interlaken, NY to bottle condition this beer, produce small, fluffy bubbles that we love out of honey, and to also add a floral hint.

Panda, courtesy of SHIG, pours with a clear deep gold colored body that has thin copper hued edges and supports a thin ring of off white bubbles. The aroma offers up an acidic lemon like note, some wood and then growing soft fruity sourness. The taste delivers a pleasing notes of acidic citrus, a cool blend of cracker, hay and woodiness and then some soft fruity sourness. This works great.
