The land that is home to our brewery was once under contract by Welch’s to produce Concord and Niagara grapes for purple and white grape juice, respectively. During the 2020 harvest, we hand picked the grapes used in this beer from the vines that you see in the background of this photo. . Concord and Niagara grapes have declined in demand over the past 30 years or so, being replaced in the Finger Lakes by hybrid and vinifera varieties. This will also be the ultimate fate of these vines, as we plan to replace a large portion of our existing vineyards with other grape and fruit varieties. . This beer is packed with the bright, juicy flavors of Niagara without the sweetness that we are accustom to. We transferred a young wild ale to rest on whole clusters for 3 months, extracting a little extra tannin from the stems. It pours a beautiful, pale straw color resembling white wine.
