Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it’s hard to make.

The beer pours a little cloudy with a a foam head that seemed to last the entire drink. Tastes like a wheaty, yeasty Belgian beer with a slight hint of lemon. There's sediment in the bottle, and I had half the beer in my glass before swishing and adding the stuff to my drink. It didn't really change much. This is a funky tasting beer, I'd recommend it if you're used to drinking Trappist ales or the typical funky wheat Belgians. Might be disappointing if you're only used to lagers and standard craft beers. Pricey, but worth a try. I really like the hand-drawn artwork on the bottles and the 4-pack carrier, which has a cheeky, funny statement on the underside. Nice packaging, nice beer, give it a go. I'd buy it again.

Pours a nice clear golden with a thick, if effervescent, eggshell head. Wheaty aroma has a definite note of coriander. Refreshing wheaty has coriander and orange notes, plus a hint of yeast. Texture is smooth, if not fizzy. Well, not super, but go to the trouble to find it.

This was kind of berliner like in it's presentation, but didn't really fit the style guidelines. Lightly funky and tart, with great interpaly between the wheat, lacto, and coriander (an ingredient I don't always care for). Ridiculously refreshing and drinkable, yet complex.
