Celtic brewers used caramel malts and roasted barley to impart a deep red color and rich malty flavour to their ales. Starting with this historical style, we worked for over two years developing and perfecting our 21st Century version. After countless tastings and adjustments, we arrived at O’Dempsey’s Big Red.     Bottle. A rich brownish red colored brew with a thin light khaki head. The nose has some malty caramel along with some peach pancakes. This tastes like cheap brown pancake syrup on some pancakes. Notes of caramel and almonds come through in the long finish. The caramel gets stronger as you drink. I think that this could easily be called an ESB. The body is slick and thick at the same time. Actually, this is a nice drinker with just enough sweetness and hints of roast to keep it interesting, I dig it.

    Pours a deep, barely translucent reddish sable with a fairly thick and fine-bubbled light tan head. Aroma is strong, spicy and surprisingly hoppy. Flavor is quite hoppy with strong tones of cloves and cinnamon and a hint of honey sweetness. Texture is sassy, fizzy and lively.
