A Method of brewing based on isolating first principals and making pronounced through pilot brewing the desired elements that contribute to the overall flavor. A Golden Ale created by blending the final recipe with its own barrel aged pilot beers fermented with wild yeasts. Each individual barrel contributes a unique flavor from the wood chosen and the cultures resident to achieve subtle complexities that develop(ed) over time. A beer which starts sweet, filling the mouth with fruit-like esters and a mild spiciness, changing to a tart and lingering flavor reminiscent of grapefruit living amidst an earthy, citrusy hop aroma. Sampled from bottle thanks to Dan and Tim. Pours copper gold with a faint haze and a whipped egg white head. Malty, wild aroma. Sweet up front. The wild yeast imparts a wonderful and unique flavor. Worth a try!

bought out by Scott of Freetail .. Pours a light hazed gold .. great foam .. . interesting meld of flavours .. . light wood and charred vanilla .. That doesn't prove anything. You could have seen him down in the restaurant, dressed up like a waiter, created some kind of diversion while she snatched it from under the table.

Sampled at GABF on 9/18/2010. This American Strong Ale pours a light gold color from a 750ml bottle. Medium sized white foamy head, with nice retention. The aroma is fruity and sweet, touch of wood and some dryness. A medium bodied American Strong Ale. The malts are fruity and sweet. The hops are floral. Touch of oak and wood, and some funk. Starts off sweet and finishes dry. Nice balance. Hides the alcohol very well. Mouthfeel is full and round. Finish is clean, smooth and dry. Aftertaste is slightly sweet,

750 ml bottle. Very lively and overflows when corked. Pours a hazy golden amber with a huge creamy bubbly white head that retains well and laces the glass.
The aroma is sweet tarty fruits with some funky earthy musty yeast, and some brett and acidic sourness.
The flavor is sweet malts and some appley fruits with some brett and funk and a little tart acidic sourness. The mouthfeel is medium to full bodied with smooth carbonation.
Overall, an interesting beer. It's a little on the sweet side for me and I would prefer more brett and/or sourness. I don't get much barrel notes. It's still very good though.
