Proxima is a small batch complex blonde sour aged in wine barrels for 18 months. We used mixed fermentation to draw out notes of peach & apricot amongst flavors of the wood layers of acidity.

poured a light golden blonde color with small white head. The aroma is fruit, with peach coming through the most. The taste is fruity but not overly sour. the mouthfeel was light bodied with nice carbonation.
