Brewed with Pilsner, Rye, Wheat, and Midnight Wheat malts, any resemblance to a typical stout ends there. It was lightly hopped in the boil with Amarillo, and then fermented with a blend of Brettanomyces strains. Allowed to develop in stainless for almost two months, there’s lots of milk chocolate in the flavour, along with light Brett aromatics and some dark, overripe fruit character.
