Inspired by Belgian dark sour beers, After the Storm is a very tart and complex brew. The souring process was started in a Chardonnay barrel with a pitch of Lactobacillus, with our house culture of Saccharomyces and Brettanomyces strains added shortly after. The beer was aged in barrel for over 18 months, then transferred to stainless for a secondary fermentation on tart cherry purée before bottling. The resulting beer has notes of cherry and milk chocolate, with firm acidity throughout.
