When There Is No Sun started its journey 22 months ago when we did an overnight double mash boil. After being tucked away in a bourbon barrel for almost 2 years, we added in the last few months a copious amount of vanilla, which was sourced from Congo. This extraordinary vanilla brings intense cacao-flavoured notes, also reminiscent of tonka sprinkled cookies.
