This beer uses a new up and coming style of yeast referred to as Kveik (kuh-vike). This yeast is typical to Norwegian barns and ferments at high temperatures. As a test, we used this experimental yeast (known for fast fermentation) in a high ABV beer to see how fast it would ferment, and we were not disappointed. Enjoy as a sipper in the old winter months.
