This is essentially a double version of our house pale ale. We used all the same ingredients except we doubled everything to create a big rich, intense, hoppy, but balanced Imperial pale ale! Brewing Process: Single infusion at a lower temperature and no mash out to increase fermentability. This pale ale receives a higher bittering charge of cryo-hops 15 min before the end of the boil. Then we doubled the charge of hops in the whirlpool and dry hop! Fermentation: This beer was fermented with our house strain but cooler to subdue esters and fusel alcohols, creating a smoother, cleaner finish considering its strength!
