Funkwerks Brett Dream
Funkwerks Brett Dream
Rated 3.320 by BeerPalsFermented with two saison yeasts and a bit of Brettanomyces yeast, this beer puts the ‘funk’ in Funkwerks! Aromas of pineapple compliment the flavors of citrus produced by our house yeast, and the subtle earthy notes found in the dry finish. Brett character will continue to develop with cellaring.

Sampled on 10/10/2012. Caution: this bottle was a fairly active gusher. This wild/sour ale pours a very hazy light yellow gold color from a 750ml bottle. Large sized white foamy head with good retention and nice lacing. The aroma is fruity, bretty and sweet, with some funk and must. A medium bodied wild/sour ale. The malts are fruity and sweet, pineapple and citrus. The hops are earthy and spicy. Very lively carbonation. Some horse blanket, some must, some leather, and some yeasty esters. A lots of dry and funk. Crisp, clean and refreshing. A nice bretty beer. Mouthfeel is full and round. Finish is dry, clean and crisp. Aftertaste is slightly tart and dry.

750ml bottle, #151/2100. Pours clear straw yellow with a monstrous rocky white head that retains well and laces the glass.
The aroma is doughy malts and floral fruity brett with some funk and a little band-aid.
The flavor is sweet bready malts and some slightly tart fruit with some earthy funk and a little brett. The mouthfeel is medium bodied and a bit watery.
Overall, like the Elder Brett I liked this better fresher. Not as fruity and bretty as I remembered.
