This release represents the second iteration of Perzik, our Méthode Traditionnelle blend aged on over 3 lbs/gal of Door County peaches. Like last year, the base for this beer is composed of some of our favorite barrels that naturally exhibit stone fruit characteristics. We blended five of these together before adding 800 lbs of yellow peaches that were hand-delivered from the folks at Barnard Farms. The result is saturated with the fresh nectar-like characteristics derived from both the local fruit and unique spontaneous beer. These provide a depth of flavor that could not have been achieved without using both in tandem.
